    This 5 week course will start by looking at the composition of the main components of foods, carbohydrates, proteins and fats. Molecular model building will be used to explain the nature of some dietary fats. This will be followed by sessions on flavour and colour, vitamins, minerals and rounded off by a short discussion of food and metabolism. Alongside these general themes, interesting components of particular foods and drinks items will be covered. Suitable for those with little scientific background. Notes provided by email.
